how to change the "Max. execution time:" and "Memory limit:" in the pictures below ?

You do that inside php.ini file for exact php version you got on docker. Upload a phpinfo.php file with phpinfo from: https://www.php.net/manual/en/function.phpinfo.php

then view it from webserver to see where and which php.ini it is using. Then edit that file to change two lines you need.

You limit the CPU controlling max upload, post and execution time.

CHEVERETO_MAX_EXECUTION_TIME_SECONDS
CHEVERETO_MAX_MEMORY_SIZE

You also limit the CPU by controlling the number of upload threads.
