Deleting Exif increases image size

I have configured the script to delete Exif whenever an image is uploaded. But I detected that this has caused changes in the size (MB) of the images.

This may happen when using GD for image processing as it needs to re-create the image to remove the metadata. Your alternative is to use ImageMagick, which doesn't require to re-generate the file.
