1. You have all that at your server log.
2. Use Google Analytics or other third party traffic analysis tool.
 
This would use tons of unnecessary resources. You can go to external services in your dashboard and add a Google Analytics code. This will give you all the stats you mentioned and more.
 
There are several outstanding server side stats software that you should check it out. I use AWStats and webalizer a lot. Those tools works inspecting your server logs so is the most accurate stuff that you can use.

Google analytics and similar services are good for other kind of info like conversions, landing page analysis, ab testing, etc.

Add extensive stats is just futile. Things that will be added are basically user sign-up rate, images per day, etc. Actually all data is being collected at this very time, just check chv_stats table.
