Best CHMOD File Permissions for Image Directory?

I'm kinda paranoid about my site being hacked or infected with viruses (so far this hasn't happened). Which are the best file permissions for the Image Directory, sub-directories and files?

Right now my Image directory is CHMODed to 777. Somehow if I change the value with FileZilla it seems to go back to 777 all the time.

All the sub-directories (the date directories) AND files (images) are CHMODed to 755.

If I CHMOD the files (images) to 666 for example, my uploaded images become invisible. Isn't there a risk that someone uploads an infected images and has it executed?
 
The best is that the user running Apache has permission to read and write directories.
