After update chevereto is unusable, I have php5.6 and php min version was increased to 7, how to solve it without upgrading php?

Ok so downgrade php to 5.6 then back up again after update is complete ?
At this time you should have 3.16 installed (filesystem), for which you could use with PHP 7.4.
Previous update also had bugs. And the one before that also, etc. Lurking for the latest and greatest release also requires a test commitment, one which is carried by only a few beta testers. If bugs appears is just because it required more testing. I suggest you to get used to this kind of "day one" situations, and always backup before.
Regarding PHP versioning, the system will always keep bumping the requirement for PHP and all the base software. As a rule of thumb, keep your servers updated if you want to run updated software like newer Chevereto releases.
